I have enjoyed this thoroughly. I leave the lettuce, chips and avacado to the side and then only dress what I want to eat and find it keeps great in the fridge for a number of lunches (2 or 3 anyway). Thank you for sharing. I omit the corn and add extra peppers/beans.

This salad is wonderful! It makes a ton so next time I will add dressing just on what is I put on the plate so I can save the leftovers. Bet it would be good with steak too!

I. Love. This. Recipe. This is my go-to “I have too much rotisserie chicken leftover”/”gotta use these veggies before they expire” recipe. I love the simplicity of it, but honestly the dressing is what does me in. SO. GOOD. We’ve started using it as veggie dip, too. You’ve created the perfect recipe, Lauren. Quick, easy, and healthy.
