Lauren, this was very good! I’m not sure if it because of the brand of taco seasoning I used, but there wasn’t enough ‘zip’ to the salad that the name “Southwest” implied. I wound up added a bit more taco seasoning, and lots more lime juice! Family LOVED the combination of ingredients and the freshness of the salad . . . it’s a keeper!

My husband usually gets the quesadilla explosion salad at Chili’s which is similar to this…and he prefers this one! I can see this being my go-to summer salad!

This was really good, but everyone needs to be reminded that it is to be tossed all together before serving as the dressing is really thick. I roasted some thawed frozen corn, used multigrain tortilla chips, added cumin and more lime juice and seasonings to the dressing. Just a matter of taste for those of us in the South!

This was incredible! I loved the dressing, although next time I might increase the ranch and taco seasonings just a bit. The combination of textures and flavors was spot on!

Yummers!! I made this last night for my lunch today & I just couldn’t wait . . . I snuck in a sampling last night for dessert! Soooo good!!

This was super good. The whole family loved it. I used more lime juice than it called for. My taco seasoning is from Penzey’s Spices and is labeled bold, so the spice did come through. When I make it again, will probably make at least the dressing the day before so the flavors will develop a little more.

My 7 year old son raves about this one! I’ve made it twice in a week and he actually said, “OH!! THIS SALAD AGAIN! YES!” We love it and it is definitely a good one for our collection!

This is a perfect salad that everyone likes! I made a similar version last weekend without the chicken, using pinto beans. The dressing was similar – one cup each of sour cream and mayonnaise, a pkg. of Hidden Valley ranch dressing mix and 1/2 to 3/4 cup salsa. I’d like to try your dressing next!
