Southwest Chicken Chopped Salad

Recipe Description

Chop a few things up and voila! A no-cook, healthy dinner!

Preparation Instructions

In a large bowl, stir all salad ingredients together, excluding the tortilla chips and avocado. In a small bowl, stir all dressing ingredients together until smooth. When ready to serve, toss salad with dressing then gently stir in avocado and tortilla chips.

Ingredients

FOR THE SALAD:
2 cups Diced Rotisserie Chicken
1 whole Green Pepper, Diced
1 cup Rinsed And Drained Black Beans
1 cup Sweet Yellow Corn
2 whole Roma Tomatoes, Diced
4 whole Scallions, Washed And Sliced (white And Green Parts)
1 whole Large Romaine Heart, Chopped And Washed
½ bunches Cilantro, Washed And Chopped
2 cups Crushed Tortilla Chips
2 whole Just Under Ripe Avocados, Diced
FOR THE DRESSING:
½ cups Mayonnaise
½ cups Sour Cream
½ Tablespoons Ranch Seasoning
½ Tablespoons Taco Seasoning
½ Tablespoons Fresh Lime Juice (optional)
Salt And Pepper, to taste

Lauren, this was very good! I’m not sure if it because of the brand of taco seasoning I used, but there wasn’t enough ‘zip’ to the salad that the name implied. I wound up added a bit more taco seasoning, and lots more lime juice! Family LOVED the combination of ingredients and the freshness of the salad, and it’s a keeper!

This was super good. The whole family loved it. I used more lime juice than it called for. My taco seasoning is from Penzey’s Spices and is labeled bold, so the spice did come through. When I make it again, will probably make at least the dressing the day before so the flavors will develop a little more.

This is a perfect salad that everyone likes! I made a similar version last weekend without the chicken, using pinto beans. The dressing was similar – one cup each of sour cream and mayonnaise, a pkg. of Hidden Valley ranch dressing mix and 1/2 to 3/4 cup salsa. I’d like to try your dressing next!

My husband usually gets the quesadilla explosion salad at Chili’s which is similar to this…and he prefers this one! I can see this being my go-to summer salad!

This was really good, but everyone needs to be reminded that it is to be tossed all together before serving as the dressing is really thick. I roasted some thawed frozen corn, used multigrain tortilla chips, added cumin and more lime juice and seasonings to the dressing. Just a matter of taste for those of us in the South!
