Description

A delicious taco salad that I always bring to a potluck. TIP: when I buy the huge tubes of ground beef at the warehouse store, I brown up 3 to 4 pounds with onions and taco seasoning and then divide them between Ziploc bags and freeze. It’s a great way to have a quick meal ready in minutes.

Ingredients

  • 1 pound Ground Beef
  • 1 whole Onion, Chopped
  • 2 cloves Garlic, Minced
  • 1 envelope Taco Seasoning, I Prefer Chi-Chi's
  • ½ cups Water
  • 1 head Iceberg Lettuce Or Romaine
  • 1 can Ranch Style Beans, Black (Or Kidney Beans)
  • 2 whole Roma Tomatoes, Chopped
  • 1 bag Mexican Cheese Blend, Grated
  • 1 bag Fritos Corn Chips
  • 1 bottle Western Dressing

Preparation

Brown ground beef with onion; drain. Add the garlic, stir for 30 seconds until fragrant. Stir in 1 envelope taco seasoning and 1/2 cup of water. Cook for a couple of minutes, until the seasoning is blended with the meat and the liquid has cooked off. Set aside.

Prepare the lettuce for the salad by washing and tearing it into bite-sized pieces. In a large salad bowl, add the lettue, the taco meat, Ranch style beans (don’t drain), tomatoes and cheese. Top with the desired amount of salad dressing (I used a little more than half a bottle). Gently toss the salad and then add about 3/4 of the Fritos. Gently toss again.

Top with the remaining Fritos and some chopped tomato, if desired, for a garnish.
