Description

Broccoli salad: easy for potlucks. Mix together the salad dressing ingredients in advance—I do this in a mason jar. This salad is even better on the second day.

Ingredients

  • 10 slices Bacon, Cooked Until Crispy, Then Crumbled (no One Complains If You Use More)
  • ⅔ cups Raisins (or Craisins)
  • ½ cups Chopped Red Onion
  • 1 cup Mayonnaise
  • ½ cups Sugar
  • 2 Tablespoons Apple Cider Vinegar
  • 2 bags Fresh Or Frozen Broccoli Florets, 12 Oz Each

Preparation

1. Blanche the broccoli. (To blanche: Bring a large pot of water to boil. Put a large bowl of ice water on one side of your sink. Put the broccoli in a heatproof strainer in the other side of the sink. Slowly pour the pot full of boiling water over the broccoli. Then immediately throw the broccoli into the ice bath. Or you can boil a pot of water, dump the broccoli in for one minute, then pour the water off of the broccoli and put it into the ice bath.) Remove the broccoli from the ice bath and pat it dry.
2. In a large serving bowl, mix broccoli with bacon, raisins and onion.
3. Mix mayonnaise, sugar and vinegar in a Mason jar. Put the lid on and shake it to combine everything very well.
4. It’s best if you can let the dressing refrigerate for awhile. Then put it on the salad and let the salad refrigerate for awhile before serving.
