Description

Cool, creamy refreshing Avocado Chopped Salad topped with spicy grilled shrimp for a cool, creamy and flavorful summer salad.

Ingredients

  • ¼ cups Lime Juice
  • 1 teaspoon Lime Zest
  • 2 teaspoons Spicy Brown Mustard
  • 2 Tablespoons Olive Oil
  • ½ teaspoons Cayenne Pepper Sauce
  • ½ teaspoons Soy Sauce
  • 2 whole Large Ripe Hass Avocados, Pitted And Peeled
  • 1 whole Medium Ripe Tomato
  • 2 whole Green Onions
  • 12 whole Uncooked Large Shrimp, Peeled And Deveined
  • 2 Tablespoons Vegetable Oil
  • 2 teaspoons Smoked Paprika

Preparation

Whisk together lime juice, lime zest, mustard, oil, cayenne pepper sauce, and soy sauce. Set aside and allow the flavors to blend.

Chop avocados and tomato into small pieces. Thinly slice green onions.

Strain vinaigrette through a sieve into a bowl in order to remove the lime zest.

Toss all of the vegetables and vinaigrette together.

Divide mixture into four parts and then spoon onto salad plates.

Brush shrimp with oil and paprika. Grill the shrimp for about 2 minutes on each side over a medium hot grill, until shrimp turn opaque.

Top each plate of avocado mixture with three grilled shrimp.

Serve immediately.

Hi Katie – YES! I di add diced cilantro. You can stir in diced cilnatro to the vinaigrette, or use for a garnish. Thanks for noticing that. Of course, it’s optional for folks who hate cilantro. I myself am a cilantro lover!

My husband and I took one look at that recipe yesterday and said “We must have that!” We made it for dinner last night and it was amazing! We both devoured it and wished we had made more. We didn’t have lime juice, so I used lemon instead. It was certainly tart, but still delicious. I do want to try it with the lime though. Darn, I’ll have to make it again! ;)
