In a saucepan, combine the sugar, vinegar and oil. Bring to a boil, stirring to dissolve the sugar completely. Set aside and cool.
In a large bowl combine the sauerkraut with all the remaining ingredients. Pour the cooled dressing over and mix well.
Cover and let stand in the frig for at least 2 hours – longer is better if you can. Enjoy!
