Description

My friend Julie served me this salad one day at her house. Her friend Sarah had given her the recipe, which came from her grandmother. Don’t you just love recipes that are passed around from relative to relative, friend to friend? This salad is so impressive and different with its apples, Craisins and cashews.

Ingredients

  • ¼ cups Sugar
  • ¼ cups Apple Cider Vinegar
  • ¼ cups Canola Oil
  • ¼ teaspoons Salt
  • ¼ teaspoons Celery Salt
  • 1 bag Baby Spinach Leaves, 9-10 Ounces
  • 2 whole Gala Apples, Chopped
  • ¼ cups Craisins
  • ½ cups Cashews

Preparation

Mix the first 5 ingredients by putting them into a small jar and shaking well. Wash the spinach and put it into a big bowl. Add the apples, Craisins and cashews. Pour dressing over everything and mix.

This is a very versatile salad. I probably add double on the Craisins, because I really like them. Sometimes I don’t use spinach at all; I go for a couple of hearts of romaine chopped up into bite-sized pieces. Sometimes I do half romaine and half spinach. Have fun with making your own version of this salad!

Loved it! I added walnuts instead of cashews and it was great..next time I plan to add some goat cheese, yum!
