Description

My husband found a recipe for a delicious and easy pasta salad in a little newspaper put out by an area lake community. We have significantly modified it over the years to suit our tastes and you can do the same.

Ingredients

  • FOR THE SALAD:
  • 1 package (16 Oz. Package) Rotini, Cavatappi, Large Shell, Or Other Large Pasta, Cooked According To Package Directions, Rinsed With Cold Water, And Drained
  • 1 can (28 Oz. Can) Cut Tomatoes, Drained
  • 2 whole Medium Carrots, Sliced
  • ½ whole Green Bell Peppers, Julienned
  • ½ whole Red Bell Pepper, Julienned
  • ½ whole Yellow Or Orange Bell Pepper, Julienned
  • 2 whole Medium-sized Pork Steaks, Beef Steaks, Chicken Breasts, Or Lamb Chops, Cooked And Sliced Thin
  • ⅓ cups Green Onions, Sliced
  • 1 can (2.25 Oz. Can) Ripe Black Olives, Sliced And Drained
  • ¼ cups Parmesan Cheese
  • Salt And Pepper, to taste

  • FOR THE DRESSING:
  • ½ cups Olive Oil
  • ½ cups Red Wine Vinegar
  • 1 clove Garlic, Minced
  • 1-¼ teaspoon Dijon Mustard
  • 1-½ Tablespoon Miracle Whip Or Mayonnaise
  • 1 whole Lime, Juice Only
  • 1 teaspoon Salt
  • Louisiana Hot Sauce, To Taste

Preparation

Pasta salad:

In a large bowl, combine cooled pasta and vegetables.

Dressing:

Pour olive oil into a mixing bowl. Add wine vinegar, minced garlic, mustard, Miracle Whip (or mayonnaise), and fresh lime juice. Add salt and season with hot sauce to taste. Whisk until smooth.Pour dressing over pasta and toss well to coat. Cover and refrigerate at least one hour before serving. Sprinkle grated Parmesan cheese over the salad before serving.
