Description

Who needs mayonnaise? Sweet potatoes with jalapenos, cilantro, lime zest, and olive oil can stand alone!

Ingredients

  • 1 whole Sweet Potato, Peeled And Cubed
  • ½ whole Jalapeno, Seeded And Minced
  • ½ whole Red Bell Pepper, Diced
  • 1 clove Garlic, Minced
  • 2 Tablespoons Olive Oil, Divided
  • Salt And Pepper, to taste
  • 2 Tablespoons Red Onion, Chopped
  • 1 whole Lemon Or Lime, Zested
  • 1 cup Black Beans
  • ⅓ cups Fresh Cilantro, Coarse Chopped
  • Honey, To Taste (optional)

Preparation

Heat oven to 400ºF. Put sweet potatoes, jalapenos, red peppers and garlic on a large baking sheet. Drizzle with 1 tablespoon olive oil, toss to coat and spread out in a single layer. Sprinkle with salt and pepper. Roast, turning occasionally, until potatoes begin to brown on corners and are just tender inside, 30 to 40 minutes. Remove from the oven; keep on the pan until ready to mix with the other ingredients.

Combine red onion, lemon/lime zest, black beans, and cilantro in a small bowl. Add the sweet potato mixture and drizzle with the remaining olive oil. Season with salt, pepper, and maybe a drop of honey. Serve warm or at room temperature, or refrigerate for up to a day.

Mmm, adding to this the meal plan for this week, so glad you serve it warm and mayonnaise free! I’ve recently become addicted to both roasted sweet potatoes AND red peppers so this is perfect :)

This was delicious and such a great, healthy dish for a summer night. Will definitely make this again. My aunt asked for the recipe because she thought it was so good.

I really like the idea of this salad but when I made it, I found the red onion to be overwhelming and mask the other flavors. I would try this again, but cut the amount of red onion in half.
