Description

Great to take on a picnic. Let it sit for a couple hours to get flavorful.

Ingredients

  • FOR THE DRESSING:
  • 3 Tablespoons Red Wine Vinegar
  • 1 Tablespoon Dark Sesame Oil
  • 2 teaspoons Finely Grated Ginger
  • 1 teaspoon Soy Sauce
  • ¼ teaspoons Salt
  • ¼ teaspoons Pepper
  • FOR THE RICE SALAD:
  • ⅔ cups Wild Rice (i Use The Pre-cooked From Trader Joe’s, The Whole Package)
  • 1 teaspoon Dark Sesame Oil
  • 1 teaspoon Soy Sauce
  • 1-½ cup Shredded Cooked Chicken (I Grill Mine And Just Cut It Into Small Pieces)
  • 1 cup Snow Peas Cut Up
  • ½ cups Sweet Red Pepper, Chopped
  • ⅓ cups Scallion, Sliced
  • ⅓ cups Currants, Dried

Preparation

1. Mix dressing ingredients. Set aside.

2. Cook rice with oil and soy sauce (or just add the oil and soy sauce to pre-cooked rice).

3. Let everything cool.

4. Combine salad ingredients together.

5. Mix in dressing.
