Description

The cold chicken salad from Cracow. Have it as a main course or as the side dish, whichever you want. Moni.

Ingredients

  • 2 whole Chicken Breasts (Boneless, Skinless, Cubed Or Cut Into Strips)
  • 1 Tablespoon Gyros Seasoning
  • 2 teaspoons Oil
  • 1 cup Ketchup
  • 2 whole Medium Sized Onions, Finely Chopped
  • 5 whole Cornichons (Or Preserved Cucumbers, Chopped Finely)
  • ⅓ cups Mayonnaise, Light
  • 1 can Sweetcorn (300 - 400 Gram Can, Drained)
  • 2 whole Tomatoes (Fresh, Chopped Finely)
  • ½ heads Napa Cabbage, Chopped, More If Desired

Preparation

Sprinkle your pieces of the chicken with the gyros seasoning and stir until well coated.

Heat the oil in a skillet over medium heat. When oil is hot add the chicken and fry it in the oil for 10-12 minutes or until well cooked and no longer pink. When ready, transfer the chicken to a large salad bowl and set aside to cool.

Pour ketchup onto the chicken until covered. Sprinkle onions over it to make a second layer. Cover the onions layer with the cornichons. Spread the mayonnaise atop. Next, layer the sweet corn and tomatoes. The top layer is the napa cabbage. Toss to combine and serve.
