Description

This healthy, delicious recipe comes together in less than 15 minutes and keeps for several days. Make it ahead for an easy, impressive meal.

Ingredients

  • 1 cup Whole Wheat Couscous
  • 1 cup Water
  • 1 Tablespoon Olive Oil
  • 1 dash Sea Salt
  • 1 dash Fresh Ground Pepper
  • 1 whole Cucumber, Peeled And Sliced In Half Circles
  • ½ pints Cherry Tomatoes, Halved
  • ¼ cups Fresh Parsley, Chopped
  • ½ cups Crumbled Feta
  • ¾ cups Shelled Edamame
  • ¼ cups Light Champagne Vinaigrette
  • 2 cups Wild Arugula (or Mixed Greens)

Preparation

To prepare couscous, combine with couscous, water, olive oil and salt and pepper in a microwave safe dish. Mix well and heat on high for 3 1/2 minutes. Fluff with a fork and put into the refrigerator to cool.

Once at room temperature or cooler, mix with the remaining ingredients, except arugula. When ready to serve (immediately or up to 48 hours later), top arugula with couscous and enjoy!

Note: for an alternate dressing, you can use 2 tablespoons olive oil and the juice of one lemon plus salt and pepper to taste.
