Great new take on quinoa, in my house. The honey and balsamic added a nice depth of flavor.

Fantastic. Didn’t have a jalapeno but we did pour on Tabasco at the table. Also added cooked chicken breast. oh – and some sauteed onions too. Avocado would be nice with this too. Next time I will add a 2nd can of black beans. Would also be divine with balsamic vinegar/olive oil dressing for a change.

I found the dressing a bit lacking in flavor ….. didn’t have a hot pepper but don’t know that that is the only thing I need to change up. I will add more lime juice to start and a bit more cumin. I think this would be lovely with avocado and/or mango and a handful of dried cranberries.

Loved loved loved this! I added all the leftover veggies I had in my refrigerator (shredded carrots, radishes), & some poached chicken. It’s filling & flavorful. I’ll definitely make this again. THANK YOU!

Tasty and easy to make. Would be great to serve to guests or just eat for lunch alone. I cook quinoa in a rice cooker and it comes out perfectly every time on the white rice setting.

PERFECT! My whole family adored this salad. It was a great way to introduce all of us to quinoa. Next time I’d add another jalapeno, because I didn’t get much spice, but I’m also pregnant and seriously loving spicy foods so maybe that wouldn’t be the greatest idea for everyone else involved in the meal.

Could I use regular quinoa? I checked at my store today, and the only kind is white, not red. Is there a flavor difference?

Yes Shari, this salad can last a good 5 days in the fridge! I often make these type of salads and bring them all week to work for lunch.

This was a hit at my house, even with my husband who is sometimes reluctant with meatless meals. I used white quinoa because it was half the price of the red quinoa, and it was still delicious! I also added a teaspoon of sugar to the dressing to balance out the citrus, but may use agave nectar next time. A great dish, that didn’t last more than 24 hours without being eaten up!

Made this tonight & it was a huge hit with my family! We loved it as a summer dish & paired it with some quacamole & blue corn chips.
