Description

A healthy fresh salad! So tasty!

Ingredients

  • 1 cup Quinoa
  • 1 cup English Cucumber, Chopped
  • ⅓ cups Fresh Dill, Chopped
  • ⅓ cups Feta Cheese, Crumbled
  • 2 Tablespoons Lemon Juice
  • 1 teaspoon Oilive Oil
  • ½ teaspoons Salt
  • ¼ teaspoons Pepper

Preparation

Cook the quinoa according to package directions. Place in a large bowl and stash in the fridge to cool a bit.

While the quinoa is cooling, cut up the cucumber and dill; crumble the feta.

Toss all the ingredients into the quinoa and chill for 30 minutes. Adjust salt and pepper and lemon juice according to your tastes.

This was a great side salad for a cookout. I had the leftovers for lunch the next day and it was just as delicious. I did add some diced red bell pepper for color. Thanks for the recipe!
