Description

Great cold pasta on a hot summer day! When it is too hot to turn on the oven or stove, this is my go-to! It is also wonderful for picnics, make ahead, grab and go. I make it the night before and reserve some dressing to ensure the pasta is coated.

Ingredients

  • 2 cups Pasta (Shells, Bow Ties, Anything Bite Size)
  • 1 can (11 Oz. Size) Mandarin Oranges
  • 1 can (20 Oz. Size) Pineapple Chunks, In Juice
  • ¼ cups Scallions (Omit The White Parts), Sliced
  • ½ cups Celery, Sliced
  • 1-½ cup Turkey Ham, Cubed
  • _____
  • FOR THE DRESSING:
  • 2 Tablespoons Pineapple Juice
  • ½ cups Mayonnasie
  • ⅓ cups Sour Cream

Preparation

Cook pasta a minute or two shy of how long you would normally cook it. Pour pasta into a strainer and cover with ice to cool.

Mix cooled pasta, mandarin oranges, pineapple chunks, scallions, celery, and turkey ham.

Mix dressing ingredients. Coat pasta, and chill.

I serve this with Hawaiian Sweet Rolls.

Yes you do drain the fruit- reserving the pineapple juice for the dressing.
