Description

This is a wonderful fruit salad—not heavy, with fantastic flavor. Doesn’t involve marshmallows. Try it!

Ingredients

  • 4 whole Medium Oranges, Peeled
  • 2 whole Apples, Cubed
  • 2 cups Pineapple Chunks, Fresh Or Canned
  • 1 cup Seedless Red Grapes, Halved
  • 1 cup Unsweetened Pineapple Juice
  • ⅓ cups Sugar
  • ½ teaspoons Ground Ginger
  • ¼ teaspoons Vanilla
  • ¼ teaspoons Almond Extract
  • ½ cups Sweetened, Flaked Coconut, Toasted (optional)

Preparation

Separate oranges into slices, and cut each slice into quarters; place in a large bowl. Add apples, pineapple chunks and halved grapes. Combine pineapple juice, sugar, ginger, vanilla and almond extract. Pour over the fruit and toss. Cover and chill for 2 hours. Top with toasted coconut before serving, if desired.
