Peaches and ginger, such a great combination.
For the dressing:
Blend all ingredients in a food processor. If dressing is too thick, thin out the dressing if needed with a little water.
For the assembly:
Spread lettuce across a platter. Place peaches all around so they look pretty. Pour liberal amounts of the dressing across the salad and top with pieces of cheese. I just ripped them off with my fingers.
A filling summer salad with grilled chicken, bacon, cashews, sliced almonds, pumpkin and sunflower seeds. It is dressed with a chipotle lime vinaigrette.
Peppery watercress pairs beautifully with the sweetness of strawberries and earthy flavor of toasted hazelnuts. Served with a red wine vinaigrette.
