Description

This is my own version of pea salad. It is a little healthier than the one with bacon and shredded cheese that many of you might already know.

Ingredients

  • 3 cups Frozen Peas, Thawed
  • 1 head Cauliflower, Chopped Into Bite-sized Pieces
  • 1 cup Thinly Sliced Celery
  • ½ cups Pitted Green Olives, Chopped
  • 1 can Heart Of Palm, Sliced Thinly
  • 1 cup Nonfat Plain Yogurt
  • ¼ cups Ranch Salad Dressing (I Use Hidden Valley Ranch Light)
  • ½ teaspoons Garlic Powder
  • 1 cup Cashew Nuts, Toasted And Chopped

Preparation

1. Mix peas, cauliflower, celery, olives and heart of palm together in a large bowl.

2. Combine yogurt, ranch dressing, and garlic powder together and then toss with the veggies.

3. Serve cold with cashews on top. Enjoy!
