Oven Roasted Potato Salad

Description
I get asked to make this at every get-together. So worth heating up the oven.
Ingredients
- 4 cups Quartered Red Potatoes
- 1 cup Mayonnaise
- 4 slices Cooked Bacon
- ¼ cups Green Onions
- ¼ teaspoons Salt
- ¼ teaspoons Pepper
- 2 whole Hard Boiled Eggs, Chopped
Preparation
Roast quartered potatoes in the oven at 425ºF for 30-35 minutes, until golden brown. Mix all ingredients together. Serve warm.
