Description

This is one of my favorite easy-to-make salads for the summer. I love caprese sald with angel hair, but I never found it easy to bring to potlucks. This salad is perfect for tomato, basil and mozzerella lovers and is perfect for summer picnics. Enjoy!

Ingredients

  • ¾ pounds Orzo Pasta (or 3/4 Of A 1-lb. Box)
  • ½ cups Extra Virgin Olive Oil
  • 1 Tablespoon Balsamic Vinegar
  • 3 cloves Garlic
  • 8 ounces, weight Fresh Mozzarella Cheese
  • 14 leaves Basil
  • 12 ounces, weight Cherry Tomatoes
  • Salt And Pepper, to taste

Preparation

In a large bowl, mix olive oil and balsamic vinegar. Press the garlic in a garlic press or chop finely and add it to the oil and vinegar. Whisk to combine. I like to use the bowl I’m going to serve it in.

Cube the mozzarella into small cubes and add to the olive oil mixture.

Quarter the tomatoes and add to the olive oil mixture.

Chiffonade the basil and add to the olive oil mixture.

Toss well to mix and let rest so the flavor can develop.

Cook orzo according to package directions. Rinse under cold water and let pasta sit for several minutes.

Add orzo to the large bowl and toss the tomatoes, mozzarella and basil until well mixed.

Enjoy! This salad does well at BBQs and potlucks, since it is oil-based.

I made this tonight for a family gathering. It was good! I think chopped up cucumber would have been a good addition.

Great summer salad — I would use less oil next time, but the flavors were delicious!
