Description

My version of a popular salad at a local cafe. Chow mein noodles with mandarin oranges and peanuts. This is one of those recipes that can easily be changed to suit your taste. Note that some of the ingredient measurements can vary.

Ingredients

  • 4 whole Chicken Breasts, Boneless, Cooked And Diced (approximately 4 Cups)
  • 1 cup To 2 Cups Chow Mein Noodles
  • ½ cups To 1 Cup Peanuts, Roasted
  • ½ whole Sweet Red Pepper, Diced
  • 1 whole Head To 2 Heads Of Lettuce, Torn Or Shredded (Or Equal Amount Of Mixed Greens)
  • 1 can Mandarin Oranges (15 Oz)
  • FOR SESAME DRESSING:
  • 6 Tablespoons Sesame Oil
  • ¼ cups Rice Wine Vinegar
  • ¼ cups Soy Sauce
  • 3 Tablespoons Sugar

Preparation

Whisk all dressing ingredients together. Cover and store in the refrigerator.

In a large bowl, toss chicken, noodles, peanuts, pepper, and greens together. Divide among four plates.

Top with oranges. Serve with sesame dressing and a roll.

(Pack dressing and oranges separately from salad if you are taking it to a picnic, or if you want leftovers.)

This is so easy and so yummy. I used seasoned rice vinegar in place of the red wine vinegar, and since it is already a bit sweet I cut the sugar in half. I also put a little ginger in the dressing. I love the combination of flavors and the crunch of the peanuts and noodles.
