Description

This is a great side salad for just about any meal. Crisp greens mixed with mandarin oranges and crunchy, sweet almonds … it’s excellent!

Ingredients

  • FOR THE TOPPING:
  • ½ cups Sliced Almonds
  • 3 Tablespoons Sugar
  • _____
  • FOR THE SALAD:
  • 6 cups Romaine Lettuce, Chopped
  • 3 stalks Celery, Chopped
  • 3 whole Green Onions, Chopped
  • 1 can (11 Oz. Can) Mandarin Oranges, Drained
  • _____
  • FOR THE DRESSING:
  • ½ cups Oil
  • ¼ cups Vinegar
  • 2 Tablespoons Sugar
  • ½ teaspoons Ground Mustard
  • ½ teaspoons Salt
  • ¼ teaspoons Garlic Powder

Preparation

Topping:
In a small pan, cook and stir almonds and sugar over medium heat until almonds are caramelized (they will be light brown and coated with melted sugar), approximately 4-6 minutes. Spread the almonds on foil or waxed paper. After they cool, break apart.

Salad:
Combine romaine, celery, onions, and mandarin oranges in a salad bowl. Top with caramelized almonds.

Dressing:
Combine dressing ingredients in a jar or container with a lid and shake well. Pour the dressing over the salad and toss.

This was tasty and easy. My prep time was more like 20 minutes. I added can chicken to make this an entree. My meat-loving husband liked it also.
Please follow the instructions to shake the dressing in a jar. I missed that part and whisked it – it didn’t mix very well.
