Description

Lighten up this summer potluck staple. Swap out a few ingredients for a no-mayo, high protein, crunchy egg salad.

Ingredients

  • 3  Hard Boiled Eggs, Chopped And Chilled
  • 2 Tablespoons Celery, Chopped
  • 1 Tablespoon Green Onion, Chopped
  • 2 Tablespoons Plain Greek Yogurt
  • 1 Tablespoon Small Curd Cottage Cheese
  • ¼ teaspoons Salt
  • ¼ teaspoons Pepper
  • 1 dash Garlic Powder

Preparation

Place all ingredients in a medium mixing bowl. Stir ingredients gently to combine. Spoon into a serving dish and serve with fresh vegetables and crackers.

Optional: Place on bread for an open face egg salad sandwich.
