Description

This salad not only tastes wonderful but is absolutely gorgeous!!

Ingredients

  • FOR THE SALAD:
  • 4 cups Romaine Lettuce, Torn Into Bite Size Pieces
  • 1-½ cup Diced Cooked Chicken (I Used Leftover Chicken, But You Could Cook 2 Boneless Skinless Breasts)
  • 2 Tablespoons Thinly Sliced Red Onion
  • 1 whole Nectarine, Sliced Into Wedges, Then Halved
  • ½ cups Raspberries
  • 1 stalk Celery, Diced
  • ¼ cups Chopped Or Sliced Almonds
  • _____
  • FOR THE DRESSING:
  • 2 whole Oranges, Juiced
  • ¼ cups Olive Oil
  • ¼ cups Red Wine Vinegar
  • 1 teaspoon Herbs From Your Pantry, Whatever Sounds Good To You
  • ½ teaspoons Salt
  • 1 clove Garlic, Grated
  • 2 teaspoons Honey

Preparation

For the salad:
First place lettuce in a bowl, then top with chicken, onion, nectarine, raspberries, celery and almonds. Pour vinaigrette over top and serve!

For the dressing:
Put all ingredients in a container that has a good sealing lid and shake the snot out of it.
