Description

Very easy and very yummy!

Ingredients

  • 1 can (16 Oz. Can) Kidney Beans
  • 1 can (16 Oz. Can) Garbanzo Beans
  • 1 can (16 Oz. Can) Black Beans
  • 4 whole Green Onions, Sliced Thin Into The Green
  • 2 cloves (Large) Garlic, Smashed And Left Whole
  • 4 Tablespoons Chopped Fresh Parsley
  • 1 cup Olive Oil
  • ½ cups Red Wine Vinegar

Preparation

Open all beans and place in a strainer, rinse and let drain. Meanwhile, in a medium size glass dish with a lid, add green onions, garlic, parsley, olive oil and vinegar. Add beans, stir to combine well. Cover with the lid and let sit on the counter all day. Then enjoy with your favorite meal. If you do not eat them all, just leave them on the counter until you eat them all. They can stay out for at least a week. Enjoy!

You can also add a can of corn, or a can of green beans to this if you like.

We have a sandwich shop in our area that serves this bean salad. We love it. I am almost positive this is the same, can’t wait to try it so we can make it on our own. Thanks for sharing!
