Description

When I was child, we ate a LOT of Jello. There always seemed to be a Jello salad of some sort at every holiday meal and for many “non holiday” meals too. As an adult I grew to not like Jello of any kind. When I met my husband his mother made this Jello salad and I once again became a Jello fan! This is a very unique recipe that is very good as either an addition to a meal or used later as a dessert dish.

Ingredients

  • FOR THE JELLO:
  • 2 packages Lemon Jello (3 Ounce Boxes)
  • 2 cups Boiling Water
  • 2 cups 7-up Or Other Lemon-lime Soda
  • 2 whole Bananas, Sliced
  • 1 can 20 Oz Can Crushed Pineapple (drained And Save Liquid For Topping)
  • 1 cup Mini Marshmallows
  • _____
  • FOR THE TOPPING:
  • 1 cup Sugar
  • 2 Tablespoons Flour
  • 1 whole Egg, Beaten
  • 2 Tablespoons Butter
  • 1 container Cool Whip (8 Ounce Tub)
  • ¼ cups Cheddar Cheese, Shredded

Preparation

Dissolve Jello in the boiling water. Once dissolved, stir in 7-up and chill until it is barely set in a 9×13 inch pan. Then, mix in the drained pineapple (reserve the juice for later), bananas, and marshmallows. Chill until completely firm. Make the topping and spread on the top of set jello mixture.

To make topping: Combine sugar and flour in a saucepan. Stir in egg, butter and the reserved pineapple juice. Cook over low heat stirring constantly until very thick. Remove from heat and chill. When it is chilled, fold in Cool Whip. Spread over Jello mixture. Sprinkle with cheese and serve.

Thanks for this! It’s what I’ve been looking for. Our family made it a lot in the 70s and 80s and I couldn’t find the recipe. We called it 7-up salad. YUM

This recipe has been in my family for years, one of those recipes that’s been passed down for the last 3 or 4 generations, the kind you used to get out of the news paper or a neighbor and tell people that it was yours lol. We make it alittle different, we don’t use crushed pineapple, but cubed, other then that it’s all the same, some people use toasted cocoanut instead of cheese but we have yet to try that, not a bad idea though.

We also call it Greek salad, I’m not sure why, it’s just always been called that lol.
