Description

This bean salad is so good, my kids beg me to make it!

Ingredients

  • FOR THE SALAD:
  • 1-½ cup Canned Green Beans
  • 1-½ cup Canned Yellow Beans
  • 2 cups Canned Kidney Beans
  • 2 cups Canned Chickpeas
  • ½ whole Onion, Diced
  • 1 cup Celery, Chopped
  • ½ cups Red Pepper, Diced
  • 1 cup Whole Green Manzanilla Olives
  • FOR THE DRESSING:
  • ¾ cups White Sugar
  • ¾ cups White Or Cider Vinegar
  • ½ cups Vegetable Oil
  • 1 teaspoon Salt
  • ¼ teaspoons Black Pepper
  • 1 Tablespoon Fresh Chopped Dill Or 1 Teaspoon Dried

Preparation

Place all of the veggies and beans in a bowl.

In a Mason jar or small bowl, mix the dressing and pour on top of the veggies. Stir and leave in the fridge for at least 24 hours. Best served on the third day, making it a great make-ahead side dish!

Agree that this is the absolute best bean salad ever! I get requests for it for any family gathering. Just be sure to make at least a day ahead and enjoy!

Making this for a potluck this week for work. Was just thinking the 1/4 cup of olives didn’t sound like much, then noticed on your website it calls for a full cup…that’s more like it! :-)

This dressing is great! I don’t know if it’s the ingredients or because it sits for 24 hours. But it is good and I’ll make it again.

This is the best bean salad recipe I have ever made! I’ve made it several time now. I had been looking for a good recipe for a long time and the ones I found were ok but not outstanding. This one IS outstanding!

I have made this Bean Salad several times and it so good! I made this for my Mom when she came to visit and she loved it! Thanks for sharing this recipe, its a keeper for sure!

This is incredible!!!! It barely made it to work with me today for the potluck because everyone at home wanted to eat it. I only changed 1 thing..used fresh oregano instead of dill at the request of a coworker. Absolutely divine!! Am curious to try with the dill next time.
