Description

My late mother, Jane, used to make this salad each Easter Sunday and it was always on the table for bridal and baby showers. This is best served with ham and snowflake rolls. It’s comfort food for me!

Ingredients

  • 1 package Lemon Jello (3 Oz. Package)
  • 1 cup Boiling Water
  • 2 cups Miniature Marshmallows
  • 1 cup Mayonnaise
  • 1 pound Cottage Cheese
  • 1 can (20 Oz. Can) Crushed Pineapple
  • ¼ cups Chopped Walnuts, Plus Extra For Sprinkling On Top

Preparation

In a pretty serving dish, add the package of lemon jello to boiling water. Add miniature marshmallows, mayonnaise, cottage cheese, nuts and crushed pineapple. Mix all together. Sprinkle with a few more chopped walnuts. Chill in the refrigerator until set, about 4-6 hours.

My mom always used white marshmallows but the kids love the multi-colored ones. It’s a great salad for spring. Enjoy!

This is a wonderful jello salad. Not to sweet and very tasty. I used sugar free jello. My family loves it.
