Description

A perfect summer time salad that explodes with freshness and flavor.

Ingredients

  • 18 whole Mixed Cherry Tomatoes, Sliced In Half
  • 14 ounces, fluid Can Of Cannellini Beans, Drained
  • ¼ cups Extra Virgin Olive Oil
  • 1 teaspoon Salt
  • 3 Tablespoons Fresh Basil, Chopped
  • ½ whole Lemon, Zest Only

Preparation

There is not a whole lot to be prepared here, which is great. This is one of those throw together salads, and one you could potentially have on the table in less than five minutes, however, the longer you let it set, the better the flavor.

Take all of your ingredients, put into a bowl and mix. Let the salad sit at room temperature for at least 1-3 hours. Then serve it up and go at it.

As stated, this salad is so fresh and just screams Summer time. The juiciness from the tomatoes, and the creamy flavor of the beans on top of the great flavor of fresh basil really makes this fresh and healthy.

This was really good. I took it to a picnic and those brave enough to try something different really liked this. I did change one thing though – I used Wish Bone Itallian dressing instead of just olive oil.
