Description

This chicken salad is a great summer staple to have in the fridge when you get back from the pool. Easy and delish!

Ingredients

  • 8 whole Chicken Tenderloins, Cooked And Shredded
  • 4 ounces, weight Mexican Cheese
  • 1 can (16 Oz. Can) Mexican Beans With Chili Sauce, Partially Drained
  • 2 Tablespoons Chopped Red Bell Pepper
  • 2 Tablespoons Chopped Green Bell Pepper
  • 4 ounces, weight Diced Green Chilies
  • 1 package (about 1 Oz. Packet) Taco Seasoning
  • ½ cups Sour Cream
  • ½ cups Mayonnaise
  • 2 cups Thinly Sliced Cherry Tomatoes
  • ¼ cups Snipped Cilantro
  • For Serving: Tortilla Chips, Tortillas

Preparation

Mix all of the ingredients together and serve with chips or whole wheat tortillas. Simple and delicious! Great warm the first day as well as from the fridge from then on.

This was soooo delicious! I mixed the mayo, sour cream and taco seasoning together in a separate bowl and then added only about 1/2 of it to the chicken, etc. because felt it would be too “wet” with all of it, but it was absolutely delicious!!!!
