Description

I do not know where the original recipe came from, but my mother always made this for us growing up. It is a delicious!

Ingredients

  • 1 pound Ground Beef, Cooked And Drained
  • 1 head Shredded Iceberg Lettuce
  • 2 whole Tomatoes, Chopped
  • 1 can (16 Oz. Can) Kidney Beans, Rinsed
  • 1 whole Onion, chopped (We Use Red Onion)
  • 1 cup Grated Cheddar Cheese
  • 1 whole Avocado, cut up (optional)
  • Thousand Island Dressing, To Serve
  • Doritos Or Other Taco Chips (you Will Only Need A Handful)
  • Tabasco Sauce, To Taste

Preparation

Cook and drain ground beef and put aside (keep warm). Place shredded lettuce in a large bowl and add chopped tomatoes, rinsed kidney beans, onion, grated cheese and avocado. Top with warm ground beef. Add salad dressing and mix. Top with crushed taco chips and add tabasco sauce to taste. Serve and enjoy.

Oh, I forgot to add that we use Catalina dressing instead of Thousand Island. Might try the Thousand Island next time!!

I love this salad. My Mom also made it when we were kids. She said she learned it in her home ec. class. It was so nice to see it posted on here. It really is delicious & brings back great memories!
