Description

Tasty and colorful combination of tuna, artichoke hearts, roasted red peppers and calamata olives. Great served on a bed of lettuce or on your favorite Italian bread.

Ingredients

  • 4 cans Albacore Tuna, Drained, 6 Oz
  • 1 can Artichoke Hearts, Quartered And Drained, 14 Oz
  • 1 jar Diced Pimentos Or 1/2 Cup Chopped Roasted Red Pepper, 4 Oz
  • 1 cup Calamata Olives, Sliced
  • ½ whole Red Onion, Minced
  • ¼ cups Cilantro Or Parsley, Minced
  • ¼ cups Basil, Minced
  • 2 whole Garlic Clove, Minced (1 Teaspoon)
  • 1 teaspoon Italian Herbs Spice
  • 1 cup Mayonnaise
  • 3 Tablespoons Lemon Juice, Fresh

Preparation

In a large bowl combine tuna, artichoke hearts, roasted red pepper, olives, onion, cilantro/parsley, basil, garlic, Italian spices, mayonnaise, and lemon juice. Mix well. Serve over a bed of lettuce or on favorite Italian bread.

To serve on bread: fill the bread with tuna and press a plate on top of the sandwich, topping with a heavy can. This way the dressing will seep into the bread. Wait 30 minutes then slice and serve.
