Description

A great, healthy, pasta salad for any season!

Ingredients

  • 1 Tablespoon Dijon Mustard
  • ¼ cups Red Wine Vinegar
  • ¾ teaspoons Salt
  • ¼ teaspoons Black Pepper
  • ¾ cups Olive Oil
  • ½ teaspoons Dried Italian Seasoning
  • 1 pound Orzo, Cooked
  • 1 cup Grape Tomatoes, Halved
  • 2 cups Black Olives, Coarsely Chopped
  • ¼ pounds Feta Cheese, Crumbled
  • 2 packages Italian Syle Pre-cooked Chicken, Bite Size (5 Oz Each)
  • 2 Tablespoons Chopped Parsley

Preparation

Make the dressing:

Whisk together mustard, vinegar, salt, and pepper. Add olive oil and Italian seasoning slowly after others are blended. Cover and refrigerate until needed.

Make the pasta:

Mix together all the other ingredients.

Pour on 3/4 cup of dressing. Fold together GENTLY then drizzle on the remaining dressing.

Serve. :)
