Description

A nutritious salad filled with all good things autumn has to offer! Your little squirrels will approve!

Ingredients

  • 1 package (16 Oz. Package) Trader Joe's Wild Rice (Cooked Rice)
  • ½ cups Balsamic Vinaigrette
  • 1 Tablespoon Dijon Mustard
  • 1 clove Garlic, Minced
  • ½ cups Hazelnuts
  • 1 cup Dried Cranberries
  • ½ cups Granny Smith Apple
  • ⅓ cups Green Onions
  • 1 cup Chicken, Cooked Or Rotisserie
  • ½ cups Blue Cheese, Crumbled

Preparation

Warm up the rice according to package directions. Add all ingredients together. Top with blue cheese.

Enjoy. Serve warm or chilled along with artisan crusty bread and champagne!

Oh, this sounds fabulous. I love rice salads. I have a couple that I make on the weekend sometimes and then eat for lunch every day. I like weeks like that. :-) I’ll be giving this a try!
