Lucy’s Fiesta Chicken Salad

Description
Quick easy salad that makes a nice side or lunch entree.
Ingredients
- 1 piece Chicken, Barbecued
- 1 teaspoon Tex Mex Seasoning Spice
- 1 head Green Lettuce
- ¼ cups Black Beans, Rinsed
- ¼ cups Corn, Cooked
- 1 whole Medium Carrot, Grated
- ¼ cups Tortilla Chips, Crushed
- ½ cups Grated Tex Mex Cheese
- ¼ cups Salsa
- ¼ cups Ranch Dressed (I Use Light)
Preparation
Season the chicken breast lightly with Tex-Mex seasoning. BBQ until cooked and cut into slices.
Combine all ingredients except salsa and ranch dressing in a large bowl.
In a small bowl, combine the salsa and ranch dressing. Mix well.
Add the dressing to the salad and toss well.
