Ole! Serve this up with some cold Dos XX beers or a margarita!

Ingredients

  • FOR THE CHICKEN:
  • ½ cups Lime Juice
  • 3 whole Large Garlic Cloves, Minced
  • ½ cups Soy Sauce
  • ¼ cups Chopped Fresh Cilantro
  • 4 whole Large Chicken Breasts
  • _____
  • FOR THE SALAD:
  • 1 whole Head Of Iceberg Lettuce, Chopped
  • 4 whole Lime-cilantro Chicken Breasts (above), Sliced
  • 1 cup Black Beans (drained If From Can)
  • 1 cup Cheddar Cheese, Grated
  • 1 cup Diced Tomatoes
  • ½ cups Cilantro
  • _____
  • FOR THE DRESSING:
  • ½ cups Salsa
  • ¼ cups Sour Cream
  • ¼ cups Fresh Chopped Cilantro

Preparation

For the Lime-Cilantro Chicken:

1. Mix together all ingredients except chicken.
2. Place chicken in container and top with the marinade.
3. Place in the refrigerator and marinate 4-6 hours turning the chicken at least once.
4. Heat a skillet over medium high heat and spray with cooking spray.
5. Cook chicken for 5-8 minutes then flip and cook for another 5-8 minutes. Juices should run clear when it’s done.

Assemble salad:

1. Divide lettuce to cover 4 plates.
2. Cover with 1/4 each of all of the toppings.
3. Top with dressing or serve dressing separately.

Dressing:

1. Mix together all ingredients.
