Kale and Orzo Salad with Roasted Peppers

Description
A great tasting and light salad made with fresh ingredients, including kale, lemon juice, white beans and happiness.
Ingredients
- 8 ounces, fluid Dry Orzo Pasta
- 15 ounces, fluid Canned White Beans, Drained And Rinsed
- 2 cups Chopped Kale
- 2 Red Roasted Peppers
- 12 whole Cherry Tomatoes
- ½ cups Olive Oil
- Salt And Pepper
- 1 whole Lemon
- ¼ cups Hard Cheese, Such As Parmesan, Asiago Or Romano
Preparation
Cook and drain pasta according to box instructions.
In a mixing bowl, add orzo, beans, and kale. Toss.
Rough chop the roasted red pepper and quarter cherry tomatoes. Add to bowl. Drizzle olive oil and mix until combined. Salt and pepper to taste. Squeeze lemon juice onto salad and mix in.
Transfer to serving bowls and top with your favorite hard cheese. This is great for up to 3 days if stored in an airtight container in the refrigerator.
