Just Peachy Salad

Description
Fresh peaches, crisp greens and feta cheese meet a tangy vinaigrette made with poppy seeds and orange juice.
Ingredients
- FOR THE SALAD:
- 8 ounces, weight Baby Spring Mix Greens
- 1 whole Large Peach, Cut In Half, Pitted, Then Thinly Sliced
- ¼ cups Red Onion, Thinly Sliced
- ¼ cups Sliced Almonds
- ⅓ cups Feta Cheese, Crumbled
- FOR THE VINAIGRETTE:
- 2 Tablespoons Apple Cider Vinegar
- 1 Tablespoon Freshly Squeezed Orange Juice
- 1 Tablespoon Honey
- ¼ cups Olive Oil
- ¼ teaspoons Poppy Seeds
- Salt And Pepper
Preparation
Add greens to a salad bowl. Scatter peaches on top, followed by onions, nuts and cheese.
In a small bowl, whisk together all the dressing ingredients until well combined. Season with salt and pepper to taste. Drizzle over salad. Toss and serve promptly.
