Description

This is my favorite summertime salad and will be at my next backyard bbq.

Ingredients

  • 1 whole Jicama, Medium To Large Sized
  • 2 whole Oranges, Medium Size
  • 1 whole Tomato, Small To Medium Sized
  • ¼ whole Red Onion Very Thinly Sliced
  • 2 Tablespoons Cilantro, Minced
  • ¼ cups Fresh Lime Juice
  • 2 whole Limes, Zested
  • 2 Tablespoons Red-chile Powder
  • 2 Tablespoons Water
  • ½ cups Honey
  • ½ teaspoons Kosher Salt
  • ¼ teaspoons Fresh Cracked Black Pepper

Preparation

For the salad, peel the jicama and cut into 1/2-inch cubes. Cut oranges into supremes (cut peel away from orange and cut orange segments away from the interior membrane). Dice orange supremes into 1/2-inch cubes. Seed tomato and dice into 1/4-inch cubes. Finely slice red onion. Mince cilantro. Set aside.

For the dressing, zest and juice the limes. In a small bowl, combine the lime juice, lime zest and chile powder. Whisk in the water and honey.

Toss the salad together with the dressing. Salt and pepper to taste. Chill and serve.
