Description

This salad is amazing either as a larger appetizer or as a main dish. It tastes light and fresh, yet is substantial enough to be a whole meal. Yum!

Ingredients

  • FOR THE DRESSING:
  • 1 whole Egg Yolk
  • 1 Tablespoon Water
  • 1 Tablespoon Dijon Mustard
  • 2 Tablespoons Minced Garlic
  • ½ teaspoons Salt
  • 1 teaspoon Pepper
  • ½ teaspoons Dry Mustard
  • 2 teaspoons Oregano
  • ½ teaspoons Sugar (honey Works Too!)
  • ⅓ cups Red Wine Vinegar
  • 2 Tablespoons Lemon Juice
  • 1 cup Olive Oil
  • _____
  • FOR THE SALAD:
  • 1 head Romaine Lettuce, Chopped
  • 1-⅔ cup Diced Cooked Chicken
  • 4 whole Roma Tomatoes, Chopped
  • 5 ounces, weight Dry Salami, Chopped
  • ¾ cups Grated Mozzarella
  • ½ cups Grated Provolone
  • 1 can (15 Oz. Can) Garbanzo Beans, Rinsed And Drained
  • ⅓ cups Fresh Basil, Chopped
  • 1 bunch Green Onion, Chopped

Preparation

Whisk the dressing ingredients together.

In a large bowl, toss the salad ingredients together with 1 cup of the Italian dressing you made. Add more dressing as needed.

Enjoy!

This reminds me so much of a chopped salad from a favorite Seattle area restaurant, Cucina Cucina. Wonderful and worth the chopping!
