Description

Eating Hoppin’ John every New Year’s Eve is a tradition. The black eyed peas represent good health and coins, and the greens represent paper money in the coming New Year. This is a cold version of a New Year’s Eve tradition.

Here’s to good luck in the coming year with Hoppin’ John Salad!

Ingredients

  • FOR THE SALAD:
  • 2 cans Black-Eyed Peas, Drained Well
  • 1 cup Cooked And Cold White Rice Or Basmati
  • ½ cups Chopped Red Onion
  • 1 whole Jalapeno Pepper, Chopped
  • 1 whole Green Or Red Bell Pepper, Chopped
  • 1 whole Avocado, Cubed
  • 1 clove Garlic, Minced
  • FOR THE DRESSING:
  • 1-½ Tablespoon Honey
  • ½ Tablespoons Szechuan Sauce
  • ¾ Tablespoons Red Wine Vinegar, To Taste
  • ¼ cups Olive Oil
  • 2 Tablespoons Lemon Juice

Preparation

Drain black eyed peas and then combine the salad ingredients in a mixing bowl.

Combine dressing ingredients in a mixing bowl. Whisk it up and adjust to your taste. If you like it sweeter, add a little honey; if not add, a little more red wine vinegar.

Toss it all together with the salad. It’s even better the next day after being in the fridge, when all the dressing is sopped up!
