Description

A little tart, a little sweet, this dressing is great on salads or over fresh fruit like apples, strawberries, cantaloupe or pineapple!

Ingredients

  • ½ whole Onion, Preferrably Vidalia
  • 1-½ cup Sugar
  • 1 teaspoon Salt
  • ⅔ cups Apple Cider Vinegar
  • 2 cups Canola Oil
  • 3 Tablespoons Poppyseeds

Preparation

In a food processor or blender, add onion, sugar, salt and vinegar. Blend for a minute or until totally liquified. Slowly drizzle oil through the top of the blender or food processor and let blend for an additional 2 minutes to emulsify. Add in poppyseeds and then blend 30 seconds more. (You can add a couple drops of red food coloring for a pretty pink color.)

Yes, how long will this keep? Must it be refridgerated? I’d love to add this to my homemade gift baskets for Christmas – but would like to be able to say how long it will keep. Looks delicious!
