Description

A perky and healthy version of Waldorf Salad with cherries and pomegranate!

Ingredients

  • 2 whole Large Crisp Apple, Cut Inot Bite-size Pieces
  • 4 whole Belgian Endives, Roughly Chopped
  • 1 whole Scallion, Chopped
  • ½ cups Dried Cherries
  • ½ cups Pomegrantae Arils
  • ½ cups Toasted Pecan Pieces
  • ¼ cups Light Mayonnaise
  • 1 whole Meyer Lemon, Zest And Juice
  • 1 teaspoon Honey
  • 1 Tablespoon Fresh Thyme Leaves
  • Salt And Pepper
  • ⅓ cups Chopped Crystallized Ginger
  • Lettuce Leaves, To Serve

Preparation

Place the chopped apple, endive, scallion, cherries, pomegranate arils, and pecans in a large bowl. Toss.

Whisk the mayo, 1-2 tablespoons lemon juice, lemon zest, honey, and thyme in a small bowl. Salt and pepper to taste.

Pour the dressing over the salad and toss.

Serve the Waldorf salad in lettuce leaves and garnish with crystallized ginger.
