Heat Wave Summer Salad! (Vegan)
Drain the spinach and put it in a bowl. Drain the chickpeas and add them to the bowl. Remove the pit then chop up the peach and add it to the bowl together with the fresh blueberries and the cooked barley.
In a separate bowl prepare the dressing by combining all of the remaining ingredients. Stir and pour on top of the salad. Stir all the ingredients together and refrigerate or serve!
