Description

Beat the winter blues with this tasty salad!

Ingredients

  • FOR THE SALAD:
  • 2 strips Bacon (cooked)
  • 2 cups Baby Romaine Lettuce
  • 2 whole Dates
  • 1 whole Peach, Cut Into Wedges
  • 2 teaspoons Goat Cheese
  • _____
  • FOR THE DRESSING:
  • ⅓ cups Balsamic Vinegar
  • 1 teaspoon Dijon Mustard
  • 2 Tablespoons Maple Syrup
  • 1 dash Salt
  • 1 dash Pepper
  • ½ cups Olive Oil

Preparation

For the salad:

Cook 2 pieces of bacon and set aside to cool.

Put lettuce in a bowl. Slice dates into strips and add to the salad bowl. Cut peach into wedges and add to the bowl. Crumble goat cheese and add to the bowl. Crumble bacon and add to the bowl.

For the dressing:

Start by using a jar or a leak-proof Ziploc container.

Add balsamic vinegar to jar or container. Whisk in dijon mustard, maple syrup, salt and pepper. Add the olive oil last and put on the lid tightly, then shake vigorously to combine.

Please note that this makes extra dressing, and you only need a little bit. Pour desired amount of dressing over salad and toss.

Reserve extra dressing in the fridge for another salad.
