Description

Savory and sweet! Makes a great picnic salad or vegetarian main dish!

Ingredients

  • 4 cups Cooked Brown Rice Or Brown And Wild Rice Mix
  • 6 whole Green Onions, Chopped
  • 1 cup Toasted Slivered Almonds
  • 1 cup Dried Cranberries Or Cherries
  • 1 cup Frozen Peas, Thawed
  • ½ cups Vegetable Oil
  • 4 Tablespoons Natural Peanut Butter
  • 4 Tablespoons Seasoned Rice Vinegar
  • 2 Tablespoons Red Wine Vinegar
  • 2 Tablespoons Soy Sauce
  • 1 Tablespoon Toasted Sesame Oil

Preparation

The noted ‘Cook Time’ is to allow for cooking the rice.

In a large bowl, combine the cooked rice, green onions, almonds, cranberries and peas.

In a small bowl, thoroughly combine the vegetable oil, peanut butter, vinegars, soy sauce and sesame oil.

Stir the dressing into the rice mixture. Chill before serving, about 2 hours.
