Description

This is a delicious end-of-the-winter salad (though it would be great in the summer too!) There’s definitely a little PB&J thing going on with this slaw, but in a great, grown-up, salad-ey way… Enjoy!

Ingredients

  • 1 bag Broccoli Slaw (12 Ounce Bag, Or You Can Shred About 2 Heads Of Broccoli Instead)
  • ¾ cups Dried Cherries (sub Cranberries Or Raisins If You Prefer)
  • ½ cups Very Finely Chopped Red Onion (about Half An Onion)
  • 1 cup Peanuts, Coarsely Chopped
  • 3 Tablespoons Low-fat Mayonnaise
  • 5 Tablespoons Fat Free Greek Yogurt
  • 2 Tablespoons Fresh Lemon Juice
  • 2 Tablespoons Rice Vinegar
  • 2 Tablespoons Agave Syrup
  • 1 teaspoon Salt
  • 1 pinch Black Pepper

Preparation

1. In a large bowl combine the broccoli, cherries, red onion, and peanuts.

2. Whisk together the mayo, yogurt, lemon juice, vinegar, agave syrup, salt, and pepper until smooth.

3. Pour dressing over the slaw and mix well.

4. Let sit for at least 30 minutes before serving so the flavors can mix together nicely.

5. Try not to eat the whole bowl by yourself.

This was fantastic! I will definitely be making this again. I had to do a couple substitutions because I didn’t have a couple of things… Sour cream for greek yogurt, yellow onion for red. I amazingly happened to have agave. It turned out great despite the alterations. Wow! Great stuff. Thanks for sharing.
