Apple, pomegranate, avocado and blue cheese salad in an apple “bowl”
If making apple bowls, slice the top off of the apple. Using an ice cream scoop or spoon, carefully scoop out the core and the apple flesh, leaving about 1/4″ of the apple ‘shell’.
Chop up the apple flesh. In a medium bowl, toss apple with pomegranate seeds, avocado, and cheese. Drizzle with a small amount of apple cider vinegar (optional). Carefully spoon mixture back into the hollowed apple shell.
