Description

A salad for every cheese lover. This salad is very nutritious, and a great choice for lunch.

Ingredients

  • 1 cup Green Lentils
  • 50 grams Cherry Tomatoes
  • 3 Tablespoons Olive Oil, Divided
  • 225 grams Halloumi Cheese, Sliced
  • 1  Red Onion, Chopped
  • ¼ teaspoons Tarragon
  • ½  Zucchini, Sliced
  • Salt And Pepper

Preparation

Wash lentils and boil as directed in package instructions. After they have cooked, rinse with cold water.

Heat oven to 180ºC (355ºF). Place tomatoes on baking paper and pour 1 tablespoon olive oil on the tomatoes. Bake for 10 minutes.

Pour 1 tablespoon olive oil in a frying pan and heat. Add halloumi cheese slices and fry on both sides until golden brown. Remove from pan.

Heat remaining oil in the same pan. Fry chopped onion until soft. Add tarragon.

To assemble the salad, mix lentils with onion. Add baked tomatoes on top, followed by zucchini and fried halloumi cheese. Season with salt and pepper, and enjoy.
