Description

Grilled watermelon with crispy bacon, thinly sliced fennel and high quality olive oil make this a refreshing, easy and unique summer treat.

Ingredients

  • 1 whole Small Seedless Watermelon
  • 1 Tablespoon Extra-virgin Olive Oil, Divided
  • ½ bulbs Fennel
  • 6 pieces Bacon
  • 1 teaspoon Lemon Juice

Preparation

Slice seedless watermelon and then cut into large chunks (about 4 inches long, almost 3 inches thick), trimming off rind. Coat with 1 teaspoon of olive oil and grill on a hot grill for about 5 minutes on each side, making sure you see grill marks.

Trim and slice the fennel – make sure it’s paper thin.

Cook 6 pieces of bacon, crumble when cooled and set aside.

Toss fennel with the remaining olive oil and lemon juice. Place grilled watermelon on plates, top with fennel and crumbled bacon.

*Note: I used local bacon, free of any nitrates, additives or preservatives.

Love, love, LOVE. This salad was absolutely amazing. The flavours dance around in your mouth in little bursts, reminding you of each ingredient’s presence as you chew. I made this for company last night and it was a hit. I wouldn’t have thought that grilling watermelon in a grill pan could set off the fire alarm, but it did. Thanks for a fabulous recipe. It’s going in my permanent collection.
